Curried Mustard Roasted Pork Tenderloin

INGREDIENTS:
3 Tbl Chin Dribblin Curried Beer mustard
1 Tbl olive oil
Salt
Pepper
1 Tbl Fresh Rosemary chopped finely
1 piece pork tenderloin (1 1/2 lbs)
1 Tbl rated garlic minced
INSTRUCTIONS:
Pre-heat oven to 375 degrees
Grab a saute pan and heat oil
While oil is heating, season pork tenderloin with salt, pepper and minced garlic
One pan is hot, sear the pork tenderloin on both sides about 5 minutes total, until a nice brown crust forms.
Remove pork from pan and place on shallow baking dish or sheet tray
Take the mustard and slather it all over the tenderloin until fully coated and then sprinkle the minced rosemary over top
Once oven is preheating place the dressed tenderloin in the oven and cook for 30 minutes or until pork reaches an internal temp of 150-160 degrees.
Once up to temp pull pork out of the oven and let rest covering in foil for 5-10 minutes
Once rested slice open and enjoy with any starch or seasonal veggies!
